Why would God care about humans believing in him when he can do anything he wants he's God?

God is a person and although He is completely self sufficient He enjoys relationships with other people. That’s not so hard to understand because if we could do anything we wanted it would be more enjoyable doing whatever we wanted with others who like doing the same things.

Obviously to have a nice relationship with others they have to believe you exist. God doesn’t mind interacting with people who hate Him. If that’s the sort of relationship we want, we can have it. We can enjoy hating God and God can reciprocate accordingly. But it requires believing that God exists.

Because God is pure goodness, He doesn’t hate those who hate Him, but He reciprocates more favourably with those who love Him.

This Krishna makes clear in Bhagavad Gita.

I envy no one, nor am I partial to anyone. I am equal to all. But whoever renders service unto Me in devotion is a friend, is in Me, and I am also a friend to him. Bg 9.29

Because Krishna can do anything, He can hide the fact that He is God and mix in with others at their level so that they appreciate Him without knowing He is in fact the Supreme Lord. That’s what He likes most.

It’s not possible to get to that level of interaction without first believing that God exists.

If we don’t want to believe God exists that’s also allowed and God will give us reasons that convince us that He doesn’t. We cannot even disbelieve in God’s existence without His help.

As all surrender unto Me, I reward them accordingly. Everyone follows My path in all respects, O son of Prtha. Bhagavad Gita 4.11
